Shrimp Fried Rice

INGREDIENTS:

  1. Long grain rice 4 cups
  2. Shrimp 300 grams (peeled and deveined)
  3. Carrots 1 cup diced
  4. Green peas 1 cup
  5. Capsicum 1 diced
  6. Onion 2 medium thinly sliced
  7. Garlic Cloves 5-6 crushed
  8. Black pepper powder 1 tsp
  9. Mixed herbs 1 tsp
  10. Vegetable oil
  11. Salt as required

METHOD:

Serving Size: 4-5

Wash and drain the rice. Boil water in a large bowl. Add rice and cook until it is done. Drain in a colander to cool down. (This step can be omitted if using cooked rice. Keep in the fridge overnight to cool down.) 

In a pan add about 1 tbsp oil. Once heated add crushed garlic. Sauté for 30 seconds and add sliced onions. Stir until they turn translucent.

Add the mixed vegetables and stir for a few seconds. Add the shrimp and season with salt.

Cook the shrimps for 5-6 minutes. Do not overcook or they will turn rubbery.

Add in the rice. Throw in the black pepper powder and mixed herbs.

Stir fry for a minute or two. Serve shrimp fried rice hot with sauteed vegetables and yogurt.

Lyonnaise Potato

  INGREDIENTS: Potatoes 500 grams peeled and sliced into 1/4th" thick roundels Butter 3 tbsp Vegetable oil 3 tbsp Onions 4 thinly sliced Paprika powder 1/2 tsp Parsley 1/2 tsp Black Pepper Powder to taste Coriander stalks 1 tsp finely chopped  Salt as per taste METHOD: Serving Size: 3-4 Wash the potatoes thoroughly. Spinach And Cottage Cheese (Palak Paneer) Paratha
